Sea Captain’s Recipe: Chocolate Layered Cake

This is a delicious recipe for a 4 layered chocolate cake that’s so decadent your friends will be begging you for the recipe! Just one way you  can bring the sweet flavors of Sea Captain’s into your kitchen!

Ingredients for the chocolate cake:

  • 3 oz of bittersweet chocolate (melted down)
  • 3/4 cup unsweetened cocoa powder
  • 2 cups sugar
  • 1 3/4 cups cake flour
  • 2 eggs
  • 1/2 cup vegetable oil
  • 2 teaspoon vanilla extract
  • 1 teaspoon baking powder

To make:

  • Combine all ingredients and whisk thoroughly
  • Bake at 350 F for 30-45 minutes

Ingredients for the for the White Chocolate Custard:

  • 1 large bag of White Chocolate Chips (melted down)
  • 1 cup sugar
  • 4 egg yolks
  • 1 teaspoon vanilla extract
  • Confection sugar
  • 1 cup heavy cream

To make:

  • Whip heavy cream, vanilla, and confection sugar until thick and set aside
  • Over double boiler combine egg yolks, sugar, and melted white chocolate
  • Cook while whisking the entire time until desired thickness is reached
  • Fold in whipped cream mixture and allow to set for several hours before use.

Ingredients for the for the Irish Crème Chocolate Mousse:

  • 1 cup Bailey’s Irish Cream
  • 10 oz melted bittersweet chocolate
  • 4 egg yolks
  • 4 egg whites
  • 1 cup sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Confection Sugar

To make:

  • Whip heavy cream, vanilla, and confection sugar until thick and set aside
  • Take egg whites and whisk until thick peaks are reached
  • Over double boiler combine egg yolks, sugar, melted chocolate
  • Cook while whisking the entire time until desired thickness is reached
  • Fold in whipped cream and egg white peaks and set aside for several hours before using

Building the cake:

  • Once all ingredients have been made the cake can be built
  • It should be a 4 layer cake with the custard and mousse alternating between layers

Serve up some slices and enjoy!
